The Butchart Gardens’ Food Services Department requires a Sous Chef to work in The Dining Room Restaurant. This position reports to The Dining Room Chef de Cuisine. Job details: A la carte dinner, banquet service and Afternoon Tea service • Assist Chef de Cuisine in day-to-day operations of the Dining Room Restaurant • Create, prepare, test and implement seasonal menus • Maintain up to date technical worksheets, recipes and costing while adhering to budgetary standards • Develop, motivate, supervise and lead all team members to ensure proper techniques, quality standards, policies and procedures are being followed • Conduct performance evaluations in a way that will promote growth within the department and lead to all team members reaching common goals • Daily cleaning, inventory, and stock rotation of all products • Daily documentation of walk-in fridges, line fridges, and freezer temperatures Candidate qualities: • Strong work ethic and ability to display a clear drive and passion for the job • Composure in directing a large kitchen brigade (up to 30 staff), and the ability to work independently • Technical competency in food service techniques, equipment, ingredients and procedures • Ability to prioritize, organize and follow through as necessary • Exceptional communication skill and the ability to hold oneself and others accountable • Strong financial management skills • Passionate, creative, and innovative about food • Detail oriented and confident to retain the vision presented • Interprovincial Red Seal certification • Three to five years in a similar position This is a full-time, year-round position. The scheduling expectation is 40 hours per week, plus overtime if/as required. Weekend work is necessary. The scheduled hours will be 1-9:30 pm for regular a la carte Dinner service and 7:30- 4pm for production and Afternoon tea service.
