Caffe Fantastico is a local family owned company with three licensed bustling locations in Victoria. We have an upcoming opportunity of Sous Chef to join our kitchen team at our Tre Fantastico location. We have a fun and approachable menu focused on quality local ingredients. We work with many wonderful local producers, and even tend our own rooftop gardens for fresh herbs and produce. Lots of room for creativity through feature creation, while executing efficiently popular dishes from our seasonal menu. Summary of Responsibilities and Functions: * Ensures compliance of all standards and procedures relating to HACCP (Hazard Analysis Critical Control Point) and provincial workplace safety standards. * Keeps menu items consistent and reports any changes to Chef * Working with Front of House(FOH) to ensure proper staff training and education. * Maintains Caffe Fantastico's food quality, plating specifications, and food cost. * Working with team, to provide leadership through verbal communication skills and through leading by example. * Requisitions food as required and helps the Chef to complete a monthly inventory. * Ensures that all invoices are marked as received, and included in a weekly envelope for administration. * Oversees the function of all kitchen equipment through conscious use, cleaning and upkeep. * Supports the business and its objectives. * Converses with front of house and customers to hear requests and feedback. * Sets standards and guidelines for allergy issues. * Developing personal skills in food prep production. * Developing a personal palette for pairing food and beverage including but not limited to: coffee, teas, cocktails, wine, and beer. * Developing skills in understanding financial systems analysis, tracking food, labour, and cost of good (COGS). * Ordering and understanding dealing with local farmers and seasonality. Requirements: * College, CEGEP or other non-university certificate or diploma from a program of 1 year to 2 years. * 2 years working culinary experience * Foodsafe level 1 + 2 * Emergency first aid * Serving It Right certification * WHMIS Full time 40hrs/week - Permanent $19.00 /hr, Tips, Extended medical
