Metchosin Free Range Pork For Sale $7/pound At Metchosin Farm we raise 3-5 pigs each year and these are pasture-raised, fed on farm vegetation and locally-milled feed. Our piggies are well treated and socialized, live in a clean (and dare I say even bucolic) setting, and have a 1/2 acre field pasture and forest/pond that they range in. Our slaughtering is done at Westholme Meat Packers in the Cowichan Valley, a family-owned operation that we know has high ethical and animal welfare standards. The cutting, wrapping, brining and smoking is done at a small facility in Sooke run by an executive chef friend who makes a top-notch and old-world style final product including thick cut chops, and double smoked bacon and hams. He cuts soup bones and also keeps the fat layer (which makes wonderful pastry!), so very little is wasted compared to a larger facility. Our price of $7.00/pound includes the butcher's cutting and wrapping charge as well as smoking, curing and slicing of the portions made into bacon, ham and sausage. We currently have 3 sides left for sale, with rail weights ranging from 82 to 100 pounds. There are many cuts and packages in each side, making it possible to share a side with friends, co-workers and neighbours. If these sides are too large for you, we are also able to offer mixed boxes of cuts, equivalent to a side in value and diversity, of 20, 30 or 40 pounds.
